The holidays are right around the corner and it always inspires me to bake! I love making cookies, bars, cakes and of course, pies! For Thanksgiving, pumpkin and apple pie are always a classic. You can never go wrong with a piece of pumpkin pie (with lots of whipped cream of course). However, a real crowd pleaser in our family is peanut butter cream!
I make a peanut butter cream pie for Thanksgiving every year. It’s easy to make and delicious! You can even make it beforehand and freeze it if you want to save yourself some time Thanksgiving day as you are preparing your other food. It's easy enough that I have my son help me make it. I just have to be prepared for him inevitably trying to lick the bowl!
Ingredients:
1 9-inch pie crust (you can make your own, but to save time, I usually by the pie crust dough you can roll out. Whatever you prefer!)
Peanut Butter Crumbles
1/2 cup powdered sugar
1/4 cup creamy peanut butter
Peanut Butter Pie Filling
1 3.4 ounce box of instant Jell-O vanilla pudding mix
1 1/2 cups milk
1/2 cup peanut butter
1 cup whipped cream or 1 cup of cool whip
Whipped Topping On Top of Pie
2 cups whipped cream or 1- 8 oz. container of cool whip for topping.
Directions:
Pie Crust -
Bake pie crust and allow to cool completely
Peanut Butter Crumbles -
Add the powdered sugar and peanut butter in a bowl. Using an hand or stand mixer, mix on medium speed until small crumbles of peanut butter start to form. If the mixture is too powdery, add a few drops of water in the bowl so the crumbles will form.
Add half the peanut butter crumbles to the bottom of the pie crust, set the other half aside for the topping. (And if your family is like mine, keep the crumbles away from snacking children and husbands).
Peanut Butter Filling -
Add the dry vanilla instant pudding mix, milk and peanut butter together in a bowl and mix for 2 minutes.
Add in the whipped cream and mix lightly
Pour pudding mix into pie crust on top of the peanut butter crumbles
Whipped Cream Topping and Crumbles-
Top with the whipped cream. I usually put the whipped cream in a piping bag to make it look nice, but you can just throw it on top too!
Sprinkle the remaining peanut butter crumbles on top of the whipped cream.
Let the pie set in the refrigerator for at least 1-2 hours before cutting. Enjoy!
